
I’ve always wanted to make scotch eggs, and I wanted the yolk to be runny. So, today I decided to go for it. I learned some lessons along the way, but 3 of 4 of the eggs turned out great. The last one tasted just fine, but the egg wasn’t completely encased in sausage when it had finished cooking.

To prevent this, I would probably use fresh sausage, instead of packaged, and I would cook at a lower temperature for a bit longer. Of course, our air fryer tends to cook things faster than you’d expect, so that might have something to do with it as well.
Regardless, this is an experiment I would repeat, and I wanted to share it with you.
What you’ll need to get:
- 4 eggs
- 1 lb breakfast sausage (I used Jimmy Dean, but would go with fresh ground next time)
- 1 Tbsp chopped chives
- 2 Tbsp chopped parsley
- 2 Tbsp spicy mustard (I used Düsseldorf)
- Pinch garlic powder
- Heavy pinch curry powder
- Pinch salt
- Pinch pepper (about 6 turns, or so, of a mill)
- 1 1/2 cups ground pork rinds (I used hot & spicy ones)
- 1 Tbsp grated parmesan cheese
Let’s do some cooking things!
- Okay, soft boil your eggs… You know how to do that, right? WHAT?! YOU DON’T?! Okay, don’t worry, just put enough water in a saucepan to cover your eggs by about an inch, and bring it to a boil. Then, gently put in the eggs and keep it at a gentle boil for 6 1/2 minutes, then take out the eggs with a slotted spoon and put them into an ice water bath for several minutes to stop cooking. When they’ve cooled, carefully peel them and set them aside.
- While the eggs are cooking, or whenever you’d like, mix together the sausage, chives, parsley, mustard, garlic powder, curry powder, salt, and pepper. Really mix that together. Get your hands in there (you did wash them… Right?)
- In a shallow dish, mix together the pork rind crumbs and the parmesan. This is your “breading”
- Now, you want to divide the sausage mixture up into 4 equal amounts. Working one at a time, flatten the sausage out in your hand and then wrap the egg (gently! don’t break it!) and pinch it all together (see photos below)
- Once wrapped, roll the super-happy-fun-sausage-egg-ball in the pork rind mixture and out on your air fryer basket.
- When all 4 are done, spray them lightly with oil and pop them in the air fryer for about 15 minutes, turning about halfway through and spraying with some more oil.
Flatten the sausage wrap around the egg pinch to close
That’s it folks… Put on your kilt and talk like Scotty, because you’ve just made scotch eggs!
